This slice makes the best chocolate chip cookie bites that get better as the days go by, but they won’t last long enough for you to find out how long that is!

Cinnamon chocolate slice

300 gm brown sugar
150 gm caster sugar
3 ea eggs
150 gm butter – melted
½ tsp vanilla bean paste
1 tsp cinnamon, ground
1 tsp salt
2 ¼ tsp baking powder
325 gm plain flour
400 gm chocolate chips – milk or dark
In a large bowl, hand whisk the eggs and sugar together, add the melted butter, vanilla and salt.
Sift the baking powder and flour together and add to the bowl.
Add the chocolate and mix all together by hand until just combined.
Spread batter into a paper lined tray 20 x 30 cm
Bake 180ºC for 30-35 mins, rotating midway through bake time. Ensure a skewer inserted in the middle comes out clean.
Allow to cool then cut into 2cm squares.
Keeps well for 3-4 days room temp, airtight.
